Harvesting lettuce that has started to bolt
Heat and long days push lettuce to flower. Once it starts, the leaves turn bitter, so picking now saves what you can.
When we suggest this
- Your noteYou noted the stage: bolting (flower stalk).
What would stop us suggesting it
- If it's still open after its window, it shows as overdue for up to 2 weeks, then closes.
- When you mark it Done or Doesn't apply. "Doesn't fit my setup" stops it for that plant this season.
What to do
- Cut the whole plant now. Leaves get more bitter as the flower stalk grows.
- Taste a leaf. If it's too bitter to enjoy, pull the plant and compost it.
- For a fall crop, sow again about 2–3 months before your typical first fall frost.
What we can't know
- How bitter the leaves are already.
- Your typical first fall frost, if you haven't set a location.
Bitterness builds at different rates by variety and weather. Fall sowing guidance varies: about three months before the first fall frost (Minnesota) or timed so plants mature 1–2 weeks before it (Utah State).
